Edamame Salad with Mint

I found this recipe on the "What did you eat" blog - it was adapted from a recipe in Sunset Magazine.

This stuff is delicious, quick and perfect as a side or just a healthy snack.






Edamame With Mint, Almonds, And Scallions
1 lb. shelled edamame, cooked about 3 minutes in boiling water, then drained and cooled
2 Tablespoons sesame seed oil
1 Tablespoon rice wine vinegar
2 Tablespoons soy sauce
1/2 teaspoon chili sauce
1/4 cup sliced almonds (or chopped peanuts or cashews)
2 scallions sliced thin
1/4 cup chopped mint or cilantro

Combine sesame seed oil, soy sauce, chili sauce, and vinegar together.  Taste to adjust seasonings, if you like.  Toss the edamame and the dressing together in a large bowl, then add the mint, scallions, and almonds and toss again.  Serve at room temperature.

I left out the almonds - just because I didn't have any in the house. To make it even quicker - I always buy the Organic frozen edamame from the grocery store.

In case you weren't aware, edamame is really just an immature soybean.  I always try to avoid purchasing any genetically modified products.  The top two GMO crops are Corn and Soy.  Whenever you purchase products with either of these ingredients - make sure to buy it organic.  Another tip: Some products that are not fully organic will use "Organic Soybeans" or "Non-GMO soybeans", so be sure to check the ingredient list.

We don't really know what the effects of eating these geneticallly modified foods and you can make a difference by not purchasing these products.
