Fast Plant-Based Meal - Vegan Maffe

On a recent shopping trip to Whole Foods, they were sampling some food and to our surprise, it was something Vegan!  It was a local company that sells yummy bottled sauces that make a quick Vegan meal.  It was super delicious when we tried it at the store and couldn't wait to make it at home! 



They provided us with several recipes using the two sauces, including a couple Vegan options - we tried the Vegan Maffe (a creamy peanut sauce) last night for dinner with potatoes, carrots, peas and spinach and it was fantastic and quick.  Another bonus is, there are no crazy ingredients.  Ingredients in the sauce are: Water, peanut paste, tomatoes, lime juice, tomato paste, scallions, onions, fresh ginger, fresh garlic, sugar, salt, canola oil, spices, habanero pepper.  Check out your local Whole Foods and see if they carry it.  You can also find Kitchens of Africa on Facebook or on their website at http://www.kitchensofafrica.com.


Here's the Vegan Maffe recipe (courtesy of Kitchens of Africa):

1 jar Kitchens of Africa Maffe sauce
1 tbsp oil
3 oz. chopped fresh spinach
1 medium carrot (cut into 1 inch pieces)
1/2 cup frozen peas
2 small potatoes, cubed
1/4 cup water
Cayenne pepper (optional)
Rice/Quinoa/Couscous

Directions:
  1. Heat oil to medium-high heat.  Add spinach and cook for 3-5 minutes or until completely wilted.
  2. Empty contents of maffe sauce into pan.  Add water to jar; close and shake well to release any remaining sauce and pour into the pan.
  3. Add potatoes, bring to a boil and immediately reduce heat to a gentle simmer.  Simmer covered for 15 minutes stirring halfway.
  4. Stir in carrots.  Simmer covered for an additional 10 minutes.
  5. Turn off heat, add frozen peas, and stir to mix in.  Allow to sit for 5 minutes before serving.
  6. Serve over jasmine rice, couscous, quinoa or eat with naan bread. (We used basmati rice.)
