Baby Kale Salad




Ingredients:
10 oz. organic mixed baby kale
1 avocado (mashed) - you'll want to pick one that is a little soft
1 small Meyer lemon, juiced
Garlic Salt (as desired)
Fresh Ground Pepper

In a small bowl, mash the avocado and Meyer lemon juice in a bowl until well combined.  Place the washed kale in a larger bowl and add the avocado mixture and sprinkle some garlic salt and fresh ground pepper.  Combine the avocado and kale (or your favorite greens) with your hands or with tongs until the kale is coated evenly.  Taste and if desired, add more lemon juice.  Top with your favorite veggies - I used a yellow heirloom tomato.

This salad is so delicious, healthy and easy to throw together.  YUM!
