Arugula Flatbread

I never expected Josh to be so enthusiastic about this dinner...I honestly wasn't so sure myself.  It is amazing how sometimes the simplest ingredients can make the most amazing flavor combination.  Looks like this will become one of our new favorite recipes.  It seriously took all of 5 minutes to throw together - delicious and fast - you can't beat that!




 Ingredients:
  • 1 package store-bought flatbread (I bought Harris Teeter's Whole Wheat Flatbreads or you can use Whole Wheat Pita Bread)
  • 1 package Organic Girl Baby Arugula
  • 2 containers of your favorite flavored hummus (I used the Sundried Tomato Hummus and Scallion Hummuses from Mediterranean Deli)
  • 1 bell pepper, chopped (red, yellow or orange)
  • 1 cup Raw Walnut Halves
  • 1 cup olives, chopped (I used Green Castelvetrano)
  • Extra Virgin Olive Oil (optional)
  • Fresh Ground Pepper
Directions:
  • Preheat the oven to 300 degrees.  Set the flatbreads on the middle rack to warm them for 3-5 minutes.
  • Once they are warm and soft, spread a liberal amount of hummus on each flatbread.  Top each flatbread with a handful of baby arugula, chopped bell pepper, a small handful of walnuts, and a small handful of olives.  Sprinkle with fresh ground pepper.  If desired, drizzle a teaspoon of olive oil on top.
  • Enjoy!  Josh folded his in half and ate it like a Gyro.  I cut mine like a pizza and savored every bite.
