Ingredients:
- 1 package store-bought flatbread (I bought Harris Teeter's Whole Wheat Flatbreads or you can use Whole Wheat Pita Bread)
- 1 package Organic Girl Baby Arugula
- 2 containers of your favorite flavored hummus (I used the Sundried Tomato Hummus and Scallion Hummuses from Mediterranean Deli)
- 1 bell pepper, chopped (red, yellow or orange)
- 1 cup Raw Walnut Halves
- 1 cup olives, chopped (I used Green Castelvetrano)
- Extra Virgin Olive Oil (optional)
- Fresh Ground Pepper
- Preheat the oven to 300 degrees. Set the flatbreads on the middle rack to warm them for 3-5 minutes.
- Once they are warm and soft, spread a liberal amount of hummus on each flatbread. Top each flatbread with a handful of baby arugula, chopped bell pepper, a small handful of walnuts, and a small handful of olives. Sprinkle with fresh ground pepper. If desired, drizzle a teaspoon of olive oil on top.
- Enjoy! Josh folded his in half and ate it like a Gyro. I cut mine like a pizza and savored every bite.
