Falafel Pitas - another quick plant-based meal!

I came across these frozen Falafel burgers at Weaver Street Market recently, so we made falafel pitas for lunch today. They were very YUMMY and very quick!

 

Guacamole Ingredients:

  • 1 ripe avocado, mashed
  • 1 Roma tomato, seeded and diced
  • 1/2 of a small shallot, diced finely
  • 1 tbsp. fresh squeezed lemon juice
  • Salt and Fresh Ground Pepper to taste
  • Handful of cilantro, chopped

Mix all above ingredients well and set aside.

Falafel burgers:

  • Organic Sunshine brand falafel burgers (there are 3 per package)
  • Whole Wheat Pitas/flatbreads
  • 1 roma tomato, sliced
  • Cucumber, sliced
  1. Preheat the broiler in your oven.
  2. Broil the burgers in the oven for a couple minutes each side until they get a little crispy and golden.
  3. Heat up the pitas in a toaster oven or in the microwave.
  4. Spread the guacamole on each pita, top with sliced tomatoes and cucumber, then crumble the falafel burger on top.
  5. Fold in half and enjoy!
Serves: 2-3
