I came across these frozen Falafel burgers at Weaver Street Market recently, so we made falafel pitas for lunch today. They were very YUMMY and very quick!
Guacamole Ingredients:
- 1 ripe avocado, mashed
- 1 Roma tomato, seeded and diced
- 1/2 of a small shallot, diced finely
- 1 tbsp. fresh squeezed lemon juice
- Salt and Fresh Ground Pepper to taste
- Handful of cilantro, chopped
Mix all above ingredients well and set aside.
Falafel burgers:
- Organic Sunshine brand falafel burgers (there are 3 per package)
- Whole Wheat Pitas/flatbreads
- 1 roma tomato, sliced
- Cucumber, sliced
- Preheat the broiler in your oven.
- Broil the burgers in the oven for a couple minutes each side until they get a little crispy and golden.
- Heat up the pitas in a toaster oven or in the microwave.
- Spread the guacamole on each pita, top with sliced tomatoes and cucumber, then crumble the falafel burger on top.
- Fold in half and enjoy!
Serves: 2-3
